So currently I’m using 1 Blocker, but I also have tried Adguard as well, however my experience between the two is very different.
Adguard for some reason makes searching on safari slow, it may be due to too many rules being set but I’m not entirely sure.
1Blocker runs great and doesn’t affect safari performance in anyway.
However I’m looking to see what everyone else’s opinions are, and maybe some suggestions on any other iOS ad/ tracker blockers.
I’m mainly looking for open source or trust worthy apps that respect privacy.

I use alt browsers like DDG and Brave that have builtin ad blocking. I also have a pihole.

People suggesting DNS filtering are missing the point. Yes, people should do it, but for cosmetic stuff you need a browser extension.
Anyway. I used to use Adguard. Like you, I noticed how slow it was making Safari. Worse, sometimes it simply wouldn’t work even though it was supposedly active.
I gave Ghostery a try. It worked. No slowdowns or anything. Then I settled for Wipr. You can’t add custom lists to it, but at least it works as intended and doesn’t seem to slow down Safari.
I only ditched Ghostery because I don’t exactly trust them. Otherwise it was working perfectly, too.
PS: I am obviously also using a custom DNS server. I’m a ControlD customer.

iOS is not known for its compatibility and openness. I am not a iOS user so what do I know.
Firefox and uBlock.
I thought FF was recently allowed on iOS? install that and use uBlock. no stupid adguard garbage or separate app required.
Have you tried setting a custom DNS? I have an old iPhone I use for reading when I have my coffee (no Sim}, I use ControlD on it and am happy.
I use a custom DNS on my router but just need something like an extension, I do appreciate the suggestion, I’ll definitely look at control D for other uses
Have you tried the app Lockdown? It’s a firewall (free) and VPN (optional, paid). The firewall seems to work quite well, at least according to their logs, and it’s open source.
ETA: not to be confused with lockdown mode
I use control d on android and love it. It allows me to block the ads both on Wi-Fi and cellular data without having to do weird VPN shit with a pihole.
