All food in cans is cooked and sterilized so should be fine to eat straight from the can. There are few riskier foods in general than fish which we eat straight from the can all the time without a second thought, so water chestnuts should not worry you at all.

I was thinking more if they’re ok to eat raw like cabbage cooked or raw good. Potatoes cooked yes. Potatoes raw no.

Everything in a can is cooked. The process involves being heated in a pressure cooker and held at above boiling temperatures for a length of time. So it definitely passes the cooked test. But even if it didn’t water chestnuts are also fine to eat raw. So if there are still any left feel free to finish off the can.
