I’m gonna disagree with you and say Pinot Gris pairs far better with limestone.
Limestone is super basic so I would pair with something acidic, I think white wines in general are more acidic so imma agree with op.
Frankly, I think the diacetyl from an aged chardonnay would give it good company if time isn’t an issue.
